🍏 Making Apple Pie with My Grandchildren

Baking apple pies is more than just a recipe in my family; it is a tradition. My Grandmother and Mother made them with me, and now I continue the ritual with my grandchildren. There is something deeply grounding about passing on these simple, nourishing practices through the generations. The children loved cutting out shapes to decorate the pie, making it even tastier for them to enjoy!

I am blessed with a beautiful Bramley apple tree, along with several others I have planted over the last 20 years. Each autumn they reward me with an abundance of delicious fruit, the perfect excuse to gather the family and make a golden, fragrant apple pie.


🥧 Shortcrust Pastry Recipe

Ingredients

  • 8 oz (225 g) plain flour (I use self-raising as a successful alternative)
  • 4 oz (115 g) cold unsalted butter, diced (I also use salted butter, but then do not add additional salt later)
  • Pinch of salt
  • 2-3 tbsp cold water

Method

  1. Mix flour and salt in a large bowl.
  2. Add the diced butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs.
  3. Gradually add the water, mixing with a knife or fork until the dough begins to come together.
  4. Knead lightly, just enough to form a ball. Do not overwork it.
  5. Wrap and chill the dough in the fridge for 20–30 minutes before rolling out.
  6. Line your pie dish (or use a pie bird or heatproof cup in the centre to let the steam escape).
  7. Bake at 220°C for 15 minutes, then reduce the oven to 180°C and bake for a fanother 25 minutes, or until the pastry is golden brown.
