Baking apple pies is more than just a recipe in my family; it is a tradition. My Grandmother and Mother made them with me, and now I continue the ritual with my grandchildren. I am blessed with a beautiful Bramley apple tree, along with several others I have planted over the last 20 years. Each autumn they reward me with an abundance of delicious fruit, the perfect excuse to gather the family and make a golden, fragrant apple pie.
🥧 Shortcrust Pastry Recipe
Ingredients
- 8 oz (225 g) plain flour (I use self-raising as a successful alternative)
- 4 oz (115 g) cold unsalted butter, diced (I also use salted butter, but then do not add additional salt later)
- Pinch of salt
- 2-3 tbsp cold water
Method
- Mix flour and salt in a large bowl.
- Add the diced butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs.
- Gradually add the water, mixing with a knife or fork until the dough begins to come together.
- Knead lightly, just enough to form a ball. Do not overwork it.
- Wrap and chill the dough in the fridge for 20–30 minutes before rolling out.
- Line your pie dish (or use a pie bird or heatproof cup in the centre to let the steam escape).
- Bake at 220°C for 15 minutes, then reduce the oven to 180°C and bake for a fanother 25 minutes, or until the pastry is golden brown.
